Molded Spirited Chocolates

Make sure your molds are clean and dry. Pour in the hot candy and using the back of a small spoon, round up the candy to the sides and top of the mold. Then you just fill them after they are set & top and seal with more of the hot candy. The easiest candy for molds is the commercial candy coating. (Brands include Merckens, Wiltons, Candiquick, Nestles, & Clasen.) One of the best parts of working with this, is that you can re-heat these by popping it back in the microwave.

Filling Ideas:

  • Rum goes well with Butterscotch Morsels
  • Mix Coconut with Irish Cream Liqueur
  • White Chocolate Chips go well with Creme de Menthe, Amaretto, or Chambord
  • Semisweet Chips are wonderful with Irish Cream Liqueur
  • Milk Chocolate is great with Grand Marnier, Kahlua, Bourbon, or Kirsch

Heat up the chips with a little butter or sweetened condensed milk. Add your liqueur to get a creamy consistency. Carefully drop into the molds, but dont fill to top. Leave enough room to seal with more candy coating.
